While in the tiny town of Saluda, N.C. I had some of the best tuna I’ve ever eaten. I was pretty sure I could identify all the ingredients in the recipe, but double checked with the restaurant chef before I left. My palate was spot on! The ingredients are simple…tuna, mayo (or veganaise), parsley, lemon juice, salt/pepper, and granny smith apples (this is the secret ingredient)!
Growing up, my grandma made tuna salad with with apples, but using the granny smith really gives the tuna more zest and bite! The sweetness and sourness of the apples pairs nicely with the creaminess of the mayo. So good!
Directions:
In a bowl, combine albacore tuna, a few dollops of mayo, salt and pepper to taste, squeeze the juice of 1/2 lemon and 1 whole peeled and diced granny smith apple (you could use less of course). Mix well and spread on toasted whole wheat bread, crackers or eat on top of a bed of lettuce! yum!
