
Black beans are probably my most utilized bean! They take to flavors well and are quick and easy to make. This is one of my favorite black bean burgers to make. Although these can be used on a bun with some spicy cheese, I REALLY like them on their own or on top of a mixed green salad.
If you want to make this recipe extra special, I used some plain low-fat yogurt and squeezed some lime juice and added some salt. It tastes like a tangy lime sour cream! I also used Muier Glen’s cilantro-garlic salsa for more heat.
Also, you can definitely use a dry pan over high heat to make these burgers, I just like to brush some olive oil on the pan to really crunch them up.
Black Bean Burgers
2 cans of black beans, rinsed
4 scallions diced
1 small red bell pepper, diced
2 teaspoons of cumin
1 1/2 teaspoons of crushed coriander seeds
generous pinch of cayenne pepper
1/2 teaspoon of chili powder
1/2 teaspoon of turmeric
2 garlic cloves, minced
3 tablespoons of lime juice (about 1 lime)
1 teaspoon of course salt
2 eggs, slightly beaten
handful of shredded sharp cheddar cheese or pepper jack
1/4 cup of cornmeal
1/4 cup of breadcrumbs, preferably whole wheat
Put 2 cups of the black beans in a food processor and process until slightly chunky. Mix the 2 cups with the other loose black beans. Add all other ingredients and mix.
Form the patties- not too big otherwise they will fall apart. Place patties on a plate and chill in the refrigerator for about 15 minutes.
Then heat about 1 tablespoon or so of olive oil in a wide pan to high heat. Add the patties and cook for about 4 to 5 minutes per side or until golden brown.
Serve with the lime sour cream and salsa and whatever fixins you like! I made Alexia’s sweet potato fries- so good!

Oh! I’ve been wanting to try black bean burgers for awhile now! With grilling season upon us maybe this week it will actually happen!
PS: How many burgers does this recipe make?
Let’s see, considering I made the patties somewhat small, I think it made about 9. I hope that they work out well- I haven’t tried them on a grill considering my tiny apt!
