The NEW keep it simple

Sorry for my very long absence from keep it simple! My life on the homefront has not been pleasant and my fiance and I are moving AGAIN! So, instead of thinking up fresh and innovative ideas, I’m relying on old favorites.

This has been my go-to comfort meal of late. Simmered black beans using my refried beans technique which you can find here. So simple, but the beans taste soo much better this way! Then instead of mashing, I just saute the beans over the stove with a little oil, cayenne, chili powder,squeeze of lime, and cumin. Then I add some lightly sauteed peppers with my favorite Goya Adobo spice. You can make a BIG pot of this and it will last for several lunches. I like to pair mine with a light cheese quesadilla (I like Cabot’s 50%) and keep it simple guac. Although its not anything innovative, it is nourishing and delish.

Hopefully, when I’m finally settled, I can get that creativity back. For now, its the simple meals I crave.
