Brunch in a Crunch

If you are looking for a quick brunch and want to impress someone (be it boyfriend or family), this is the recipe for you. When I woke up this morning, I had the craving for a traditional “brunch” meal. But, then I remembered, I don’t have the $20 to shell out for a typical brunch in D.C. Then, it popped into my head- my own french toast! Not only is it more economically savvy ($4 for a loaf of bread, ingredients from the pantry, milk), it is certainly restaurant quality. This took me about 30 minutes to make and I did not have to get out of my pj’s.

But, one word of advice, the bread makes all the difference. My bread of choice is challah bread, it is simply THE BEST for french toast and available at most super markets or local bakeries.

Cinnamon French Toast

6 thickly cut challah bread slices (almost the whole loaf)
4 eggs
1/4 cup of whole milk or skim (I used skim)
1 teaspoon vanilla
1 teaspoon cinnamon
1/2 tablespoon sugar
1/4 teaspoon nutmeg

Beat 4 eggs in wide bowl (big enough for bread dipping). Add 1/4 cup of milk, vanilla, cinnamon, sugar, and nutmeg and whisk. Place 1 tablespoon of butter on pan and set heat to medium low. Dip bread slices and place on pan. Cook until golden brown on each side. Serve with warm maple syrup or powdered sugar on top.
