Sunday Eating!

I love seeing what food choices other bloggers make during their normal days. I’d thought I would share what I ate during a lazy sunday! Since this was a weekend, I didn’t have a snack like I usually do, since I woke up later. I will make sure to share what I eat during a normal workday!

Breakfast- Strawberry pancakes, drizzled with honey. I love this recipe for pancakes, the only change I make is to use 1/3 whole wheat flour with 2/3 all purpose flour. Although the recipe calls for 3 tablespoons of butter, the pancakes are enough for two people and I like to use butter sparingly- its natural and it is not unhealthy for you when used in smaller quantities. When making these pancakes, as Jennifer suggested, when the top of the pancake starts bubbling, I drop the sliced strawberries on top, cook for a minute, and then flip. Very fluffy, moist, and delicious!

Lunch- Grilled Cheddar Cheese on Whole-wheat Sourdough. I like to crisp up this sandwich using about 1/2 tablespoon of canola oil. I had some left over broccoli salad the other day which tasted sweet and crunchy. The cooking light recipe is awesome because it uses light mayo and yogurt, which makes it nice and tangy. I also added some dried cranberries for an extra zing!

Dinner- I love wontons! I decided to make some sauteed wontons filled with ground chicken, carrots, and cabbage. Recipe to come soon- I’m still perfecting the filling. However, I don’t think I’ll be making this anytime soon. First, the wontons take forever to fill and fold & it’s not a dish I would make all the time because of the extra oil. Also, I ended up making them in a ravioli shape b/c I could stuff more filling inside!

Dessert- Strawberry muffin! I just created a new muffin recipe that I will share with you this week. Savory and sweet!
