I love eating pancakes or waffles on the weekends. I look forward to the excitement of eating something more interesting than the usual cold, boring, blah breakfast foods. Here’s a quick, easy recipe for simple, moist, hot and delicious pancakes that you can whip up in just a few minutes!
1 cup all purpose flour ( you could use whole wheat flour)
3/4 cup milk
1 tblsp baking powder
2 tblsps vegetable oil
fresh or frozen strawberries (chopped)
Combine all ingredients in a mixing bowl. In a skillet, heat a pat of butter until it melts and coats pan (do not burn butter!). Then pour pancake mix into hot skillet into large dollops. Cook pancakes on one side, until you see lots of little air bubbles on the top of the pancakes. Add strawberries and then flip and cook on other side. It only takes about 5 min to cook on each side. The strawberries make the pancakes super moist. Serve hot with a pat of butter and all natural 100% maple syrup or molasses. 1 batch makes about 6 to 8 pancakes depending on size of dallops.
