I’m a big fan of Ellie Krieger, the host of Healthy Appetite on food network. She has a similar food philosophy to mine because she likes to use more whole, natural ingredients, and focusing on low calorie dishes without sacrificing taste. I recently took out her book “The Food You Crave” at the library and have been anxious to give a few recipes a try!
I tried the chinese chicken salad and it turned out beautifully! Not only is it very simple to assemble- just baking the chicken breast in soy sauce and sesame oil and cutting vegetables, but the salad is super tasty. The dressing and the toasted almonds are what makes this dish special.
Check out the recipe here. The only thing I changed was to include more veggies in the salad and I used baby romaine instead of the cabbage that she called for.
