
I was in the mood for a starchy veggie the other night and potatoes were my starch of choice. I do love sweet potatoes, but sometimes I am definitely in the mood for white red-skinned taters! But why should I feel bad? Potatoes are NOT a bad food. Although they get a reputation of being too many carbs, they are excellent sources of potassium (more than a banana) and vitamin C (45 % of DV) and a normal sized potato with skin is only 110 calories!
Now, obviously, most of us loooove potatoes with tons of butter, loads of sour cream, etc. I tried to make this a lot lighter. I took Jennifer’s advice and boiled the potatoes until they were practically falling apart- then I used a masher to mash up the red potatoes (I left the skins on).
Smashed Potatoes
1 pd of small red potatoes, chopped in half (boils more quickly)
1/3 cup of light sour cream (or more if you prefer)
2 tablespoons of butter
drizzle of EVOO
few tablespoons of potato water (just ladle out of boiling water)
few tablespoons of low-fat milk
salt
pepper
chopped chives
Just boil the red potatoes for a long time- probably a half hour or so until potatoes are almost falling apart. Drain potatoes (while reserving a few tablespoons of water) and then put potatoes in a large bowl to mash. Add some salt, pepper, sour cream, butter, EVOO, potato water and low fat milk. Then MASH!!
I chopped some fresh chives from the farmer’s market and put on top. Delicious!
I also cooked some chicken scallopini- very easy! I just sauteed thin chicken breasts over medium high heat with a few teaspoons of canola oil – about 2 minutes and 20 seconds per side. Then I made a quick sauce with 1 cup of chicken broth and 1/2 cup of white wine- until reduced to about half. Then I swirled in about a tablespoon of lemon juice and a pat of butter. Just serve the sauce on top of the chicken and you are done!

I stay away from potatoes b/c of the carbs. I shouldn’t be so afraid of them. I did make a great spinach/mashed potato dish a few weeks ago. On the bright side, I’ve learned to love sweet potatoes.
spinach and mashed potatoes sounds great! Yeah, I try not to have white potatoes too often, because there are healthier alternatives, but it’s nice to have them every once in a while
