As you know, my boyfriend and I have REALLY cut down on our consumption of poultry and meats. I try to eat poultry only once a week and red meat only once or twice at the most per month. However, I do love bbq and I rarely have it- especially since I haven’t found any good bbq in DC. I was craving it the other day and decided to make some very easy bbq!
This is so easy and delish! You need a good amount of shredded chicken (I used 4 organic baked chicken breasts and shredded it by hand). You can use rotisserie chicken, baked chicken, etc. Then you use your favorite bbq sauce. Right now, my favorite is Dinosaur BBQ sauce. It’s made with all natural ingredients and no HFCS! The flavors really pop and it’s not very smoky- which is good on my list. All you do is add the amount of bbq sauce that you want with the shredded meat.


Put the chicken & bbq mixture in a safe microwave dish and put in the microwave on a low heat. Cook for 6 minutes or more until the bbq sauce has warmed up. Then serve with crusty rolls and whatever sides you like- we used sweet potato fries and lots of green olives!

Kathy- I found it at Harris Teeter, but I’m not sure if it’s widely carried as its produced in Rochester, NY and primarily local.
You are right that there is no good bbq in DC. It’s probably the reason I turned vegetarian. sad.
I like Capitol Q in Chinatown. But I like Texas-style more than the really saucy kind of BBQ.

That is so funny! The only reason I know about Dinosaur BBQ is because of my upstate NY boyfriend AND the fact that I also lived in upstate ny for college and law school! So delish!
That’s great! May I ask where he’s from and where you went to school? I grew up in Geneva (between Rochester and Syracuse) and went to Hobart and William Smith. My boyfriend is from Syracuse.
I went to SUNY binghamton for undergrad then went to SUNY buffalo for law school- the boyfriend is from buffalo. What a small world! it seems there are a good amount of upstate new yorkers transplanted in DC!
