I’m always looking for recipes that will save me time in the kitchen. I ran across this spice rub in a Better Homes & Gardens magazine and had to try it. The spice rub was sweet, but had a spicy kick and I used all of the spices that were already in my pantry! All you need to do is put together the spice rub, which takes about 5 minutes and rub it on chicken breasts. Preheat the oven to 400 degrees and bake the chicken for 20 minutes and you’ll have dinner! Also, this dish is kind to your waistline with only 200 calories per chicken breast.
Paired with my chicken dish, I decided to give Trader Joe’s ‘spearean risotto a whirl. Although I was pleased at how quick it was to heat up- 6 minutes in the frying pan, it was missing something for me. It was creamy and the asparagus was tender, but I felt that there was some additional seasoning that could’ve perked up the dish. I think that I would still buy it again, but I might add some more garlic to the mix next time.
In addition to the risotto, I heated up my fave green beans- Trader Joe’s french string beans. They are very thin with a bite and are easy to heat up in the microwave with a few squirts of lemon juice, olive oil, and a sprinkling of salt and pepper.
An easy meal, but definitely satisfying.
Here is the spice rub recipe:
1/4 cup packed brown sugar
2 tablespoons paprika
2 teaspoons salt
2 teaspoons ground coriander
1 teaspoon ground black pepper
1 teaspoon garlic powder
1/2 teaspoon cayenne pepper
4 chicken breast halves
1 tablespoon of olive oil
Combine all of the spieces in a small bowl and mix. After rinsing the chicken and patting dry, brush the chicken with oil. Generously rub the spice rub on both sides. Arrange chicken in a baking pan and refrigerate for 15 minutes. Bake chicken in a 400 degree oven for 18 to 20 minutes.
Although this recipe calls for more chicken breasts than I would normally make, it’s a good idea to freeze the cooked chicken breasts for later use. You could use them in a pita sandwich, on top of a green salad or in an enchilada dish.
Also, if you have leftover spice rub, keep it in a ziploc bag for later use.
