Yes I have not been in the kitchen lately- but I have an excuse. I recently moved to a new area: Alexandria, VA and I am dealing with the not so pleasant task of moving all of my belongings to my new apartment!
So far, I’ve been enjoying lots of easy and healthy dishes like my favorite spanish beans, lots of quick & simple soups like this one, as well as a much deserved visit to the original FIVE GUYS burger joint in Alexandria, VA. I have to say, while I rarely ever get fast food- these burgers were phenomenal! Juicy and full of my favorite toppings and the french fries are crispy and delicious. It is definitely one of my rare treats!
Also, since I was moving away from a great neighborhood- Cleveland Park in DC, I picked up some Greek food from a local restaurant, Fresh Med, on one of my last nights in town. Although its not anything incredibly special, its comforting and the hummus is great! The prices are very reasonable, but again, I am completely partial since this was just a stroll down from my old apartment and convenient! You can check out the menu here.

I am getting back into the swing of things including getting used to my new big kitchen! Hopefully my greater space will influence more creative recipes

Jessica, thanks so much- we did get engaged a few months ago! We actually live very close to you (I think)- we live about two minutes from Southern towers. We’re def getting used to the area! Know of any great restaurants around here?
Yes, I think we are very close! We love walking around Shirlington (http://www.villageatshirlington.com). It’s a very quaint neighborhood with some good restaurants and shops. Old Town Alexandra is great too-lots of options-we’ve had good experiences with Bilbo Baggins, Chart House, and PX Lounge (for drinks). Restaurant Eve is good, but on the pricier side. And if you’re in the mood for some NY Style Pizza, you can’t beat Valentino’s (www.valentinosnystylepizzeria.com). We are from Upstate New York (Geneva, Syracuse area) and this is probably the closest to NY style pizza we’ve had down here.
Hope you’re settling into your new surroundings! I lived in the city for a while and I am in love with the “suburban” feel of Fairlington. Let me know if you’d like to meet for coffee sometime!
