Yogurt Cake

When I saw this recipe on bellaeats, I knew that I had to make it. Whenever it hits springtime, I have a craving for a light fresh cake topped with berries. Andrea’s yogurt cake looked moist and delicious- just what I was looking for!

Since I had some frozen blackberries, I decided to make an easy blackberry compote instead of the lemon glaze. All you have to do is simmer a bag of blackberries over the stove with about 1/3 cup of all fruit blackberry preserves (no sugar added) and a few tablespoons of sugar. The compote is also useful for topping for pancakes, sweet breads, etc!

I believe I will be making this cake again this summer!
