Happy Birthday Jessica! For Jessica’s 26th birthday (today), I baked her a delightful lemon loaf. I got my inspiration from Bella’s recent tribute to lemon desserts. Because Jessica likes healthy, organic recipes, I decided to follow Molly’s Lemon Yogurt Cake recipe and add my own twist. I subbed organic spelt flour for the all purpose flour and added a tsp of vanilla extract to the batter. Also, I stirred in some lemon zest and almond slivers into the icing before pouring it on top of the cake. The result was a super moist, lemony, corn-meal like cake. The spelt flour adds a whole wheat, somewhat grainy texture that gives more substance to the cake-sort of like a cross between cake and sweet corn bread. I was very pleased with the result and so was Jessica. Happy Birthday lady!
