The other day I came home from work and I wanted a cookie. Badly. And I wanted a really decadent, super unhealthy, super chocolaty one that would make me lapse into a sugar coma for hours so I wouldn’t feel guilty about watching nonstop episodes of Arrested Development (I have a bit of an obsession lately) in lieu of visiting the gym.
I tried to exercise restraint, but it was no use. Mama needed a cookie! The best I could do was cut back on the sugar and sub in some whole wheat flour. So there you go. It was a mad cookie frenzy. But don’t worry, I ate a whole plate of veggies for dinner.
Ingredients: (Makes about 2 dozen cookies)
2 sticks of butter
1 cup sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups all purpose flour
1/2 cup whole wheat flour
1/2 cup cocoa powder (be generous!)
1/4 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon baking soda
1/2 cup chopped peanuts (unsalted or lightly salted)
1/2 cup peanut butter chips
1/2 cup chocolate chips
Directions: Preheat oven to 350 degrees. Cream together the butter, sugar, eggs and vanilla until fluffy. Next, add in the flour, cocoa powder, baking soda, baking powder, and salt and mix until combined.
Next, add in the peanuts, chocolate chips, and peanut butter chips.
Chill the dough for 30 min to an hour.
Roll the dough into balls and place evenly on a cookie sheet. Bake at 350 for about 12 minutes. Cool before serving.
Enjoy with some cold milk.
Then go eat a veggie plate. That cancels out the cookies, right?

I like the disclaimer that eating a plate of veggies after is perfectly acceptable. These look so delicious. Sadly, if my wedding wasn’t in August, I’d be chomping on about 828329 of these. Freeze some for me so I can eat them in September, k? K
I know what you mean, this kind of cooking is seriously derailing my “get fit for the wedding” plan. Ack! September for you and November for me- the cookie monster will come out from hiding!
