I was craving a summery, refreshing, sweet treat. I had some leftover ginger juice from the Ginger People. I decided to turn this juice into a popsicle. I love popsicles in the summer, and with the hot weather we had in D.C. this weekend, an icy pop seemed like a cool idea. I chopped up some fresh pineapple mint and basil from the herb garden. I heated the herbs with the ginge liquid on the stove top to infuse the flavors. Once heated, I strained the herbs out of the juice and poured them into popsicle containers. They only needed a few hours to freeze and they were ready to eat. They were yummy! The ginger was hot and spicy but was tempered by the cold of the pop. The flavor of the herbs didn’t come through as much as I would have liked. But, they were still good.
