Glazed Pumpkin Cookies

by Jessica on January 18, 2009

I was searching through recipes to figure out what to do with some canned pumpkin I had in the pantry.  Of course, what came to my mind was pumpkin cookies!  I found this recipe on allrecipes.com and the results were very good.  The dough is VERY sticky to work with but, all in all, I thought they came out tasty with a cake-like texture.  I added a little more butter than called for in the glaze and used pumpkin pie spice instead of the cloves and nutmeg in the batter.  I also reduced the amount of sugar in the batter to 1 cup as well.  Yum!
I froze more than 1/2 the cookies in separate ziploc freezer bags and they freeze very well.
He LOVED them!
