Lately, I’ve had a serious hankering for marshmallow.
Um, not exactly. More like this.
This weekend calls for marshmallow fluff cupcakes. After all, it’s Valentine’s Day.
I started with a box mix of devil’s food cake. Using a box mix saved time, allowing me to concentrate on the icing.
For the icing, you’ll need: 1 1/2 stick of butter, 1 cup confectioner’s sugar, 1 tsp vanilla extract, and a 7 oz jar of marshmallow fluff. I followed this recipe and halved it.
Don’t resist, just go with it.
Cream together the butter. Add the sugar slowly until blended. Next, add the fluff and vanilla and mix until it looks like a white, fluffy cloud.
Try to maintain composure.
Just one tiny taste, if you must.
When the cupcakes are cool, pipe the icing onto the top.
Or, if you’re lazy like me, you can simply smear it on. Don’t be stingy.
Now it’s time to decorate. Don’t hold back.
I gave my sweetie this one.
He gave me these.
Hopefully you’ll get a few of these.
And none of these.
