Wow, that’s a mouthful. I’m the first person to admit this recipe is ridiculous. It’s a marshmallow dipped in rich, melted chocolate sitting on a bed of crushed peppermint candy. It’s so bad, but so good. And absolutely perfect for the holidays. Don’t fight the urge, just go with it. You and your holiday guests will be happy you did.
Ingredients: (makes about 20 pops)
1 bag of medium sized marshmallows
coffee stir sticks
1 bag of bittersweet or semi sweet Ghirardelli Chocolate chips
1/2 cup crushed peppermint candies (perhaps left over from that last batch of peppermint bark)
Melt chocolate on the stove top. Be sure to use a good brand of chocolate with cocoa butter to help it melt smoothly (that way you can avoid the dreaded double boiler).
Poke the coffee stir sticks in the marshmallows.
Then, dip each marshmallow into the melted chocolate, coating the marshmallow completely.
Next, dip the bottom of the marshmallow into a bed of crushed peppermint and place on wax paper to set.
Allow about 20 min for the chocolate to cool. You could put them in the fridge to speed up the process.
Once the chocolate has set, plate the pops or wrap them individually in saran wrap for guests to take away. These are great for parties because they look fantastic and can be eaten easily with no mess.
You could make these for all types of parties and showers by switching out the peppermint for colored sprinkles or nuts and by using white or milk chocolate instead of dark. You could even roll the entire marshmallow in peppermint or sprinkles or nuts. Feel free to get creative with these.
