So, it’s been a while since my last post. I do apologize. I could give you a laundry list of excuses, but how about a treat instead? This stove top version of classic apple pie is good enough to eat without the “a la mode,” but where’s the fun in that?
Ingredients: (makes 4 servings)
5 red apples (cored, peeled, sliced)
1/2 cup rolled oats
1/2 cup raisins
1/2 cup water
juice and zest of 1 lemon
2 teaspoons cinnamon
1 Tablespoon brown sugar
1/2 cup toasted, chopped walnuts (optional)
vanilla ice cream
Directions: Throw the apple slices in a large pot with a lid and add the water. Cover and cook on high until water starts to boil, then turn it down to a simmer. Stir in the brown sugar, cinnamon and lemon juice and zest. Cover and simmer until apples turn soft (at least 30 minutes).
When the apples are tender, add in the oats and raisins. There should still be some remaining water in the pot, but if not, simply add a splash or two. Cook the apples down until they are practically falling apart. The oats and raisins should absorb any extra water and everything should kind of thick and gooey at this point.
Taste the apples and add more sugar or spice, if you like. Turn off the heat. Next, toast up those walnuts in a pan, on low heat.
Serve the apples in small dishes with a massive scoop of ice cream on top. Sprinkle with walnuts. (Sadly, I forgot my walnuts.)
This makes a terrific breakfast treat, with or without the ice cream.
