So, I’m really disappointed. I had taken dozens of glorious photos for this post but somehow managed to delete nearly all of them before they could make it onto my computer.
I don’t know exactly what happened. Guess I’ll chock it up to having my head in a million places, running around trying to- as Liz Lemon would say- “have it all!” Sigh. Or maybe, and I suspect this is the real reason, it’s because I’ve been guiltily sneaking off to watch Girls Aloud videos and neglecting my household duties. I’m a lost cause. But I did manage to pull this off.
Though, this dish was slightly confused. You see, it wasn’t sure whether it wanted to be dinner or dessert.
The gnocchi was hearty and savory enough for a meal. But the brown sugar vanilla cream sauce tasted like a caramel syrup. I say it was dessert masquerading as dinner.
Whatever it was, it was delicious. And I didn’t need any sweets afterward.
Ingredients:
1 package sweet potato gnocchi (frozen or fresh)
1/2 Tablespoon butter
1/8 cup brown sugar
1 teaspoon vanilla
1/3 cup heavy cream
1/4 cup grated parmesan
a pinch of salt
Directions: Prepare the gnocchi and set aside. In a sauce pan on medium heat, melt the butter and brown sugar. Add the cream and vanilla until heated through and very fragrant. Add the gnocchi to the sauce to coat. Top with parmesan and a pinch of salt and serve.

Pesto gnocci is my favorite but I’ve ordered cinnamon gnocci before as a snack and it is SO GOOD! So I can imagine this would be amazeballs too!

That looks insanely good! I tried making my own sweet potato gnocchi for Christmas dinner last year… it was ok… but let’s just say that if I never see this packaged version, I’m opting for it instead.
