The other night I was craving veggies and lots of them! But, I wanted something hearty and filling so I decided on veggie burgers made with lots of green veggies.
1 can chick peas drained and rinsed
1 clove garlic minced
1/4 cup chopped onion
1/4 cup peas
a few large handfuls of spinach
a couple of chopped carrots
a handful of sliced almonds
salt and pepper
In a blender, I blended all the veggies (once they were washed, chopped and prepped). I added the egg to the mix and a bit of water to bind it and thin it out so that it would blend easily. I transfered the mix to a bowl and blended with breadcrumbs, seasonings (you could also add some shredded parmesean here). I added enough breadcrumbs to dry out the incredients so that I could make into small patties.
In a skillet, I heated evoo and cooked patties until brown on each side (takes only a couple of minutes). I was ready to eat in no time! I served up the burgers with 1/2 sliced avacado and fresh sliced tomatoes. You could get really creative and serve the burgers with dipping sauces, or on top of a salad, or with noodles or even top with sprouts. You can also feel free to experiment with lots of different veggie, nut and spice combinations in the burgers. I’ve made an italian version using a variety of veggies, italian breadcrumbs, italian seasoning and tomato sauce for binding all topped with parmesean. Just have fun with it!
