Fried Fish Sandwich

I don’t do a lot of fish on this blog, but every once in awhile I get a craving. Summer and fried fish go hand in hand, which is why I couldn’t resist posting a lightening quick fried fish recipe. This sandwich is beautifully simple- nothing more than a good, thick piece of fish, some pickled veg and a spoonful of mayo. Anything more would be too much. Serve with chips and a cold beer.

Ingredients: (1 sandwich)
1/2 baby carrots, measure out and then chop fine
1 lime
1 Tablespoon mayonnaise
Kaiser roll or burger bun
Cod, tilapia, trout or grouper (go for a thick cut, rinse and pat dry before using)
vegetable oil
1 cup panko bread crumbs
1 egg
1/2 cup milk
salt

Directions: Squeeze the lime juice over the chopped baby carrots. Stir and set aside.

In a fry pan, pour enough vegetable oil to generously coat the bottom. Heat the oil.

In a small bowl, prepare the egg wash, by whisking together the egg and milk. Set aside.

In a separate small bowl, pour the panko bread crumbs and add in a teaspoon of salt.

Once the oil is hot, dip the fish in the egg wash and then into the panko. Coat both sides evenly. Place gently in the hot oil.

Brown each side of the fish until golden. Remove from oil and place on a paper towel to absorb excess oil.  (Sorry no pictures of this process, but fish, egg wash, hot oil and camera do not mix!)

Lightly toast the kaiser roll. Slather with mayonnaise and a good helping of pickled carrots.

Add the fish.

All you need is some chips and beer.
