
I love fish tacos! I wanted a new twist on these so I used shrimp- they are really simple and quick to make and they take to flavors really well. Here, I just did a simple marinade with what I had on hand. The shrimp turned out juicy and had nice flavor. Feel free to substitute your favorite white fish in this recipe, I’m sure it would come out just as yummy.
I served these alongside some corn and quick cooked black beans (sauteed with onion, garlic, tomatoes, cumin, chili powder, oregano, goya adobo seasoning).
2 limes, juiced
2 teaspoons of chili powder
1/2 teaspoon of cumin
1 teaspoon of olive oil
salt
1 bag of raw, deveined shrimp, thawed (about 20 shrimp)
Shredded Cabbage
Favorite toppings: shredded cheese, pica de gallo, chopped avocado, olives, chopped red onion, cilantro,etc!
Marinate the shrimp in the lime, chili powder, cumin, olive oil, and a sprinkle of salt for about 20 minutes. Then saute the shrimp over medium heat until pink (about 4 minutes).
Add to your favorite tortilla (I used flour, but typically buy corn tortillas) and then dress with your favorite toppings. If you are wondering what sauce I used-I made a simple chipotle mayo. I just put 1/2 cup of low-fat mayo, 1 chipotle pepper, with a tiny bit of adobo sauce and blended it in the food processor. Very spicy and delish! I never knew how easy homemade sauces could be!
