Shrimp & Grits

This recipe is deceptively easy. Shrimp and grits are a traditional southern dish and, yes, everyone has done recipes for this. I wanted to do something simple and satisfying. I love the plump tender shrimp with the spicy undertones and bites of sweet pepper and buttery mushrooms.

I used this recipe for cheesy grits from Cooking light. It only uses chicken broth, low-fat milk, and water. The grits turned out creamy and cheesy- I used about 1 cup of sharp cheddar. I also added black pepper and about 1/2 tablespoon of butter to the grits.

Spicy Shrimp
1 pd of shrimp, raw & deveined
1 package of white button mushrooms
1 1/2 teaspoons of paprika
1/4 teaspoon of cayenne or as much as you like (or hot sauce)
1/2 teaspoon of goya adobo seasoning with black pepper
salt
2 cloves of garlic, minced
6 green onions, diced
1/2 tablespoon of unsalted butter
2 teaspoons of grapeseed/canola oil
2 teaspoons of lemon juice

Set butter and olive oil over medium high heat. Add the red pepper and mushrooms and the white ends of the chopped green onions. Saute until tender. Add garlic and saute for 30 seconds. Add shrimp, cayenne/hot sauce, goya, and paprika. Once shrimp are pink, stir in lemon juice. Add some salt and pepper on top.

Look how beautiful this dish is- garnish with the green ends of the onions.

As a side note, I also decided to have a cool and refreshing side. During the summers, I like to purchase fresh cucumbers. I’m a big fan of dill pickles and I like to eat sliced cucumbers with white vinegar and freshly cracked pepper and sea salt. Tangy and delicious- like a super fresh pickle! I know it may sound weird- but we all have some strange favorite foods, right? :)

That looks delicious! I’ve never really like grits, but that looks like a good way to cook them. The spicy shrimp matches well with the grits.

It’s so funny that you were cookin’ up shrimp and grits while I was in Charleston chowin down on shrimp and grits! yum!
