For the love of pomegranate

Pomegranate seeds, also known as arils, are one of my favorite snacks to eat. Ever since pomegranates have gone out of season, I have missed these. When I went to Trader Joe’s yesterday, I found these seeds in the refrigerated section. I was SO excited- I haven’t seen these anywhere else, and believe me, I have searched.

They are crunchy, tart and sweet and provide such a burst of flavor, which make them a perfect topping! I load them on frozen yogurt/yogurt/ice cream. They also taste fab on salads and you can even toss them on cereals. Pomegranate arils are about 80 calories for 1/2 cup and provide 5 grams of fiber. They are also filled with Vitamin C AND antioxidants. I am positive there are other great uses for these seeds, and I can’t wait to find out more!
