This is one of my all-time favorite summer salads. It is light and simple, yet filling and substantial. All you need is some mixed greens, crab meat and a half avocado. It takes about 5 seconds to prepare.
Ingredients: (1 salad)
mixed greens
1/2 avocado chopped
jumbo lump crab meat (or 2 sticks of imitation crab meat)
Directions: Top your bed of greens with avocado and crab. Drizzle with 1 tsp evoo, a dash of salt and good bit of cracked pepper. That’s it…really. It’s that easy to make.
