Meaty Sub

On a night where I did not want to buy any groceries, I decided to cheat and use things I had on hand and in the freezer. When I made my turkey meatballs and marinara sauce, I froze some leftovers for later use. Tonight was that night! I just defrosted the sauce and meatballs and made this yummy sub.

Easy Meatball Sub

1 whole grain roll
3 meatballs, sliced and warmed
1/4 green bell pepper, sliced julienne
1/4 red bell pepper, sliced julienne
1/3 onion, sliced julienne
defrosted marinara sauce (or about 1/4 cup of storebought sauce)
small handful of your favorite cheese (I used a mix of fontina, parmesan, and romano)

Preheat oven to 350. Place 2 teaspoons of olive oil in pan over medium high heat. Saute the onions and peppers until slightly softened.

Cut the sub roll and place warmed sliced meatballs, peppers and onions, and put sauce over. Crumble some cheese on top and place in oven until cheese melts.

So easy, economical, and much healthier than any sub you can buy at an italian shop!
