Classic Mac n Cheese

I don’t know why I haven’t posted this recipe until now. A friend gave it to me back in college and I find myself making this dish multiple times a year as a side for parties and other occasions. Of course, it’s great to make as a meal at home, but I resist doing so because it’s not the healthiest of recipes. I prefer sharing decadent foods with friends.

Ingredients:
1 box of elbow macaroni (whatever type you prefer)
2 small packages of shredded extra sharp cheddar cheese (approx 2 cups)
1 egg
1 large container low fat cottage cheese (small curd)
salt and pepper
*for a little more tang and creaminess, add a very small container of sour cream (totally optional)

Directions: Preheat oven to 350 degrees. Cook macaroni and let cool. Combine macaroni, 1 package of cheese, egg, cottage cheese and season generously with salt and pepper. Pour mixture into a glass baking dish and bake for 30 minutes. Then, top with remaining pack of cheese and bake until the top is nicely melted and slighly browned. For some reason, I can’t find a photo of the finished product, but I think you get the general idea- ooey, gooey cheesey goodness. This dish is a big hit at backyard cookouts.

Hi

What size box of elbow macaroni did you use in this recipe. What size is a very small container of sour cream are you referring to, because the only size containers of sour cream I can get in my neighborhood is a 8oz and 16oz. containers.

Hi, Jackie! Thanks for your comment! Use a standard 14 oz box of elbo mac (or as close to that as you can find). Also, the 8oz container should work fine. I know some stores sell 6 oz and that may be preferable to some cooks. Hope you like the recipe! :)

This is such a winner recipe and real crowd pleaser. Am I this college friend you mention? This recipe I believe was my mom’s mac and cheese casserole I used to make a lot.
