Baked Nachos

June 13, 2010

This is a classic go-to recipe I love to make when friends come over. It’s great for any night of the week, can be whipped up at a moment’s notice, and makes a great snack at parties. It’s a perfect gooey, crispy, cheesy treat- best served with a cold Tecate beer.

Ingredients:
tortilla chips
1 can of refried pinto beans (full fat or fat free)
salsa
jalapeno slices
shredded cheese
lettuce, sour cream, avocado (optional)

Directions: Preheat oven to 350 degrees. In a 9 x 9 glass baking dish, layer tortilla chips. Then, smooth the refried beans evenly on top to cover. Next, layer with salsa and jalapenos and cheese. Bake for 15 minutes or until cheese is melted on top. Serve with cool lettuce, sour cream, avocado slices and more salsa. This dish is inexpensive, easy and perfect for serving family style.
