I love cool and refreshing cucumbers in the summer. One of my favorite ways to eat them (a way I experienced frequently in China) is with a light drizzle of oil and vinegar and a little salt and pepper. Mix olive oil and red wine vinegar in a small bowl to taste. Season the cucumbers and then toss them in the vinegar mix. You can eat right away or let them sit awhile for a more pickled flavor. This technique also works great with summer tomatoes.
