Toasted Pumpkin Seeds

It’s only one week from Halloween! Can you believe it? I love this time of year! I do everything I can to get myself in the Halloween spirit. I carve pumpkins, make pumpkin recipes, watch scary movies, and brainstorm costume ideas for the big night.

Last night, I carved this year’s pumpkin into a classic Jack O’ Lantern grin. I had a lot of fun cleaning out the ooey gooey insides and cutting out the features. I also enjoyed toasting the seeds-adding another dimension of fun to pumpkin carving. For my batch of seeds, I separated them from all the pumkin strings and lined them evenly on a baking sheet. I sprinkled with a few dashes of salt, coriander, cinnamon, chipotle pepper, and sugar. Baked at 400 degrees for 15 minutes. They were perfect- light and crispy with a little salt, sugar and spice!
