Chocolate Nut Butter

I cannot tell you all how tired I am tonight! After a long stressful day at work, I find it difficult to blog even a sentence! And considering that I have to write all day at work, I’m not surprised. But, I had to tell you about this new snack that I found.

I was shopping this weekend at the local Harris Teeter (Tweeter as I like to refer to it!) and found Emerald Cocoa Roast almonds in dark chocolate. These almonds are so yummy. Not only were they crunchy and healthy, but the dark chocolate taste is just enough and it’s not too overpowering. I really wanted to see if this would work as a nut butter. I just added a generous serving to my very small food processor and blended with a tiny bit of water and some canola oil. This turned out slightly chunky and with the slight taste of chocolate. And, it was so easy!

I like to spread the nut butter on fruits and crackers, but I see it as an even more wonderful addition to my daily oat bran cereal. yumm!

Ugh, I am obsessed with the cocoa roasted almonds!! They taste like hot chocolate! :D

Thanks for the comment on my blog! I haven’t tried the cherry pretzel Pro Bar. I tried a variety at Whole Foods. I liked the original and koka moka ones the best. I think I’ll try more, but it’s too expensive to buy often.

Love the choc. nut butter. When I get back from my trip I think I’m going to try to make some.

Hope tomorrow is less stressful!

Kristin: I know, they are sooo good! I can’t believe I never tried them before!

Alison: Yeah, Jennifer said that they were quite expensive but I guess they are nice for a treat! Thanks, I hope today is better too!

Melissa- You should really consider getting one, I have a small one by Cuisinart and I think it cost only about $30 on Amazon. It’s great for making pesto, chopping veggies, blending dips, nut butters, etc!

Hi Jessica – Thanks for your comment on my blog! I recently made almond butter for the first time and it came out great! I can’t wait to do it again. I’ve been thinking of different flavor combos and chocolate is definitely on the list. :-)
