I’m sure many of you will be dining out tonight in celebration of Valentine’s Day. Seeing as I’m flying out to Austin, TX at the crack of dawn tomorrow and I’ll likely work late tonight, my husband and I will probably order pizza and stuff our faces while finishing up the second hour of Downton Abbey on the couch. (As a side note, season two is painfully cheesy, but I still can’t turn away!)
If you are like us- in need of something quick and easy for dinner tonight- this recipe should do the trick. It also makes leftover chili a tad more enticing.
Ingredients: (serves one to two)
1 large sweet potato
1 pot leftover chili (use any recipe you like or try this vegan coconut chili)
sour cream
cilantro, rinsed and chopped
Directions: First cook the sweet potato. I typically microwave mine until it’s soft.
Stuff with hot chili.
Top with sour cream and cilantro.
Share with your valentine. Slice in half or serve with two forks.
A super simple dinner for two.

Great idea for an easy meal! We are moving Valentine’s Day to Saturday since our weeks can be so crazy busy.
Love it! I am sweet potato-obsessed and am convinced they are delicious topped with just about anything.
