Black Bean and Red Pepper Breakfast Burrito

Most days I am not a breakfast person. I’m fine with a cup of coffee and a granola bar or a piece of toast. I’m just not into breakfast (unless someone puts a muffin or donut in front of my face in which case I can conjure an appetite faster than you can blink). But occasionally I’ll wake up starving. Does this ever happen to you? At times like this, I need bulk, heft and lots of protein- a serious breakfast. This burrito comes to my rescue every time.

Ingredients: (makes one burrito)

1 flour tortilla
1/2 red bell pepper, chopped
1/4 cup onion, chopped
1/2 cup canned black beans, drained and rinsed
1 Tablespoon salsa (plus more for dipping)
1 large egg, beaten
1/2 avocado
1 teaspoon cumin
1/2 teaspoon onion powder
1/8 teaspoon cinnamon
1 teaspoon oil
(use additional toppings such as cheese, cilantro, onions, sour cream, or whatever you like on your burrito)

Directions: Heat the oil in a skillet on medium high heat. Add the onions and red peppers. Sauté until tender. Add the black beans, cumin, onion powder and cinnamon, and stir for a minute or two, until the beans become soft.


Add in the egg and salsa and stir until all the egg is cooked.


Scrape the mixture onto a flour tortilla. Dress with the avocado and more salsa.


Top with cilantro or spring onions or whatever additional toppings you like. Add a pinch of salt if desired.


Roll the tortilla to make a burrito. Serve with a side of salsa.


Breakfast craving satisfied!

I sometimes wake up feeling that way too. A nutrigrain bar and coffee doesn’t always do the trick. This looks tasty!

Okay, I’m going to try this soon – and the potato and parsnip pancakes (for brunch) too. Finally something to do with my beans, eggs, and onion – I always have that.
