I’ll let you guys in on a little secret. I’m a big fan of marshmallows. I know vegetarians aren’t supposed to say such things, but it’s true. I just can’t help myself. Of course, I use vegan marshmallows when I can find them or sub in marshmallow fluff whenever I get a craving for my puffy, gelatinous friends. And right about now, I’m having a seriously intense craving (a common problem when blogging about food).
What I love about marshmallows is how transitional they are. They work perfectly with every season. Floating in a steaming cup of hot cocoa in winter and sizzling over a campfire in summer. Ah, campfires. They remind me of long ago days in Girl Scouts, making crafts and earning badges. And hocking cookies. I sold the heck out of some Girl Scout cookies. And thus came the inspiration to make and share my own version with you. Et voila, “campfire cookies.”
Perhaps the only thing tastier than marshmallows, is a cookie stuffed with marshmallows. And graham crackers. And chocolate chips. Like a s’more wrapped up in a cookie. Campfire cookies, the best cookies I’ve ever made. Hmm, maybe I should start selling these…
Ingredients: (makes about 2 dozen cookies)
- Adapted from How Sweet Eats’ Hot Cocoa Cookies
2 sticks butter
1 cup sugar
2 eggs
1 teaspoon vanilla
2 cups flour
1/2 cup cocoa powder
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup marshmallow fluff (or mini marshmallows)
1/2 cup chocolate chips
1/2 cup crushed graham crackers
Directions: Preheat oven to 350.
Cream butter, sugar, eggs and vanilla until fluffy.
Add flour, cocoa powder, baking soda and salt. Mix until combined.
Gently fold in the marshmallow fluff, chocolate chips and graham crackers.
Cover dough with plastic wrap and refrigerate until chilled. Scoop the dough into 2 inch balls and bake on a cookie sheet for 12 minutes.
Allow to cool slightly before taking off the baking sheet. Cookies will be very moist and slightly sticky. Please handle with care.
Mmmmm. Check out that gorgeous marshmallow.

There were so good. Moist, chewy, perfectly chocolatey. I will definitely make these again. Probably won’t crush my graham crackers quite as much next time, couldn’t taste the them as much when they were crushed so fine. Thanks for this recipe!

These look so amazing yet mine came out flatter than pancakes (totally not worth including in the gift package to Afghanistan they were meant to join). Any tips on what I did wrong?
Julia, sorry to hear the cookies didn’t turn out. It sounds to me like your baking soda might have been old. Typically, old baking soda is the culprit behind flat cookies.

I adore s’mores, so these cookies are calling my name. I bet they’re amazing right out of the oven, when the marshmallow and chocolate chips are still gooey, like they were just toasted over a fire.

LOL! You can make these, eat two and give the rest away. That’s what I do these days. I haven’t tried making smores with vegan marshmallows. Must try that soon! Mostly, I just use the fluff stuff when baking.
