And, to get your started off right, I’ve got a super simple recipe making great use of this dream oil.
Coconut Mashed Sweet Potatoes
Ingredients: (makes 2 to 4 servings)
2 medium sweet potatoes (cooked)
1 generous tablespoon coconut oil
1 dash cinnamon
a handful of shredded coconut
1 tsp light brown sugar (or agave nectar)
Directions: This one’s a no-brainer. Just the way I like it.
Cook sweet potatoes (I usually do this step in the microwave) and scrape the insides into in a mixing bowl. Do this while the potatoes are still hot.
Add the coconut oil, cinnamon, sugar, and a bit of the shredded coconut. Mix well.
Top with a bit more coconut garnish and serve.
This is a simple, satisfying dish that can be made any night of the week. It’s also one of my favorite ways to use coconut oil!

Mmm.. baked sweet potatoes are my go-to pre-race dinner. I always have it with almond butter and maple syrup, but I’ll definitely give this recipe a go next time. Any excuse to eat more coconut

Sweet potato is said to be a superfood. They’re high in fiber, Vitamin A, Vitamin C, Vitamin B6, potassium and manganese. I’ve been trying to find new ways to eat sweet potatoes, and this recipe came at the right time!
