Cool Cucumber Wraps

On a hot D.C. day, I was in search of a cool snack that would satisfy my hunger but leave me feeling light and refreshed. I turned to Courtney’s raw cucumber wraps for inspiration. To make these wraps, peel your cucumber and slice it lengthwise paper thin. You will need a good, sharp knife for this skill…as well as a steady hand! Use the cucumber as the outside of the wrap. Inside, put chopped red pepper, avacado, or anything you like (onion, celery, green pepper, carrot, or even a little cheese). You can dip these treats in hummus or spicy mayo for extra flavor. I loved these wraps so thanks for the idea Courtney!
