I LOVE burgers. But, I’m a newbie vegetarian so I have replaced the old fashioned burger with a vegetarian substitute. A lot of veggie burgers are just plain gross. They are often dry, have a strange texture, and do not satisfy. Through a little trial and error, I’ve come up with a veggie burger that is the top! It’s easy to make, you can alter the ingredients based on what you have, it’s super healthy and full of flavor.
Ingredients:
1 medium potato (cooked 4 min in microwave)
green veggies (you could use peas, lentils, asparagus or even celery)
chopped tomatoes
chopped onion
chopped garlic (1 clove)
nuts (pine nuts, sunflower seeds, almonds, etc)
1/2 cup plain breadcrumbs
1 egg
1 tblsp curry paste
dash curry powder
dash cumin
dash salt and pepper
Directions:
Drain chickpeas and blend in blender or mash with a potato masher until mostly smooth. Combine chickpeas and all other veggies and nuts in a large mixing bowl. On the stove, mix tablespoon of curry paste and 1/2 cup of water until the paste is mixed into the water. Add the curry paste water mixture to the veggies in the bowl (that you mixed previously). Add in breadcrumbs and egg and combine together with the curry powder, cumin, salt and pepper. Form the mixture into patties. You should be able to make anywhere from 4 to 6 patties. Cook in a skillet with extra virgin olive oil. Cook on medium heat on each side for 3 to 5 min per side. Each side should get a nice brown crisp. You can top these with cheese if you want and plate on a bed of basmati rice or lettuce. Serve with a side of veggies, hummus, catsup or mayonnaise. This recipe serves 1 to 3 persons. If you are a single, just cook what you need and freeze or refridgerate the rest until you can cook it. Or, cook all the patties and refridgerate what you don’t eat. Cold leftovers the next day are delicious! Enjoy!
