My husband had been begging me for weeks to make his mother’s banana nut bread recipe. He proclaimed it to be the best ever. I finally got around to some baking last week and added this to the list. I’m so glad I did. Although simple, this was by far the best banana bread I’ve ever eaten (or made). My favorite thing about this recipe is that it calls for pecans rather than walnuts, as so many banana breads do. It’s also extremely moist (thanks to 4 bananas in the mix) and incredible easy to make, making it a perfect go-to recipe.
Ingredients: (makes one loaf)
1/2 cup shorting or butter
1 cup sugar
2 eggs
1 teaspoon vanilla
4 ripe bananas
1/4 cup milk
2 cups of self-rising flour
2 teaspoons baking powder
1 cup of chopped pecans
Directions: Preheat oven to 325 degrees F. In a mixing bowl, mash together the bananas and sugar.
Add in the remaining ingredients and mix well. Pour into a lightly greased loaf pan.
Bake for 60 minutes.
Serve with a drizzle of honey and hot cup of coffee.
