“Hodgepodge pizza” might be a better name. I literally grabbed an armful of half empty, almost expired ingredients out of the fridge and threw this together on Wednesday night. Turned out to be blog worthy!
I wanted pizza but my fiancé was on pizza overload and couldn’t stomach the thought of red sauce. So, I concocted something a bit different. We had some open pesto in the fridge that I imagined would work nicely with onions and cheese, oh and some tangy feta. Turns out I was right (and I like being right). So, that’s how this super tasty, cheesy pesto and onion pizza came to be.
Ingredients:
1 premade whole wheat pizza crust (any brand)
1 cup pesto
2 cups shredded cheddar cheese
1/3 onion sliced into thin rings
1/4 cup feta cheese
Directions: Bake according to instructions on the crust package. (I used a non-frozen crust and baked it at 375 degrees for about 10 minutes.)
Start by spreading and even layer of pesto on the crust. Next, top with cheddar cheese, then feta, then the onion rings. In that order! Only kidding. Bake until done.
Reminiscent of a Pizza Hut commercial, no?
Cheeeeeeeeese…
Serve with a simple salad (mixed greens tossed with a splash red wine vinegar and olive oil and a pinch of salt and pepper). Feast.
