This pasta dish makes a tasty, super quick dinner option for those nights you don’t feel like cooking much. It’s a riff off my my recipe for Greek pita pizza (which I still eat so often it’s embarrassing) and incredibly flavorful for being such a simple dish. You could easily throw this together in 20 min.
Ingredients: (makes 2 servings)
8 oz dried linguine pasta
1 small shallot, chopped fine
2 Tablespoons pesto
1/3 cup sliced cherry tomatoes
1/3 cup sliced mushrooms
1/3 cup sliced kalamata olives
1/3 cup feta cheese, crumbled
1 teaspoon extra virgin olive oil
Directions: Cook the pasta, drain and set aside.
In a skillet heat the oil, shallots, tomatoes, and mushrooms. Cook for about 3 minutes, stirring often. Turn off the heat and add the pasta, pesto, olives, and feta. Toss to combine.

YUM! I love your take on Greek pizzas, so this is just as genius. And it doesn’t seem super heavy so it would be really good in the summer! Do you think any other pasta type could be used instead of linguine? Like bow tie or penne?
I think any pasta would work for this dish.
