This is my favorite way to eat broccoli (haven’t tried grilling it yet so that’s next on my list!). Simply rinse and chop a head of broccoli. Next, place it in a mixing bowl with rough chopped garlic (for a more intense garlic flavor go with finely chopped). Add a good drizzle of extra virgin olive oil and season with salt and a few dashes of ground coriander. Toss until well coated and transfer to a roasting pan. Bake in the oven at 400 degrees for 15 to 20 minutes- until edges are crispy and brown. Serve as a side dish to accompany fish or in a salad.

I eat this on almost a weekly basis. Sometimes I grate lemon zest, or toss with toasted pine nuts…. and I almost always grate fresh parmesean at the end. Yum!
