Apples and turnips are a great combination. The textures are similar, but the flavors contrast nicely; the sweetness of the apples mellowing out the slightly bitter turnips. For me, this is a go-to week night meal which requires few ingredients and can be eaten on the cheap. All you need is a few good-sized turnips and apples, a roasting pan, a little oil and some seasoning. This dish is perfect on a cold night when you want something to warm you up.
Ingredients:
2 to 3 turnips (peeled)
2 apples (peel if you like)
2 Tablespoons extra virgin olive oil
dash of kosher or sea salt
dash of ground black pepper
dash of coriander
Directions: Preheat oven to 350 degrees. Chop apples and turnips into smallish cubes, uniform (or as close as possible) in size. Place on a roasting pan and drizzle with olive oil. Toss until well coated. Then toss with seasonings until well coated.
Roast for 25 to 30 min, or until tender. Serve as a side dish.
