Sun dried tomato and arugula pizza

This is a really quick and super flavorful pizza recipe. You can make it a variety of ways and it only takes a few minutes. Use a prepared pizza crust (like boboli) or dough (from any store). Top with your favorite pizza or spaghetti sauce, and 2 handfuls of mozzerella. Then, take 4 tablespoons of ricotta and drop each tablespoon in a little mound-1 in each quadrant of the pizza. Top with sun dried tomatoes (chopped or whole), finely chopped onions and whatever other toppings you like. Bake for as long as the dough requires- until fully cooked. Then, pull pizza out of the oven and top with a generous amount of arugula. You don’t want to bake the pizza with the arugula because it will wilt so wait until after it’s baked to top it. The arugula is fresh, light and peppery and is the perfect pairing with the pizza. It’s easy pizza and a salad!

Yum! I love pizza. Sun-dried tomatoes and arugula are great toppings. I’d usually use goat cheese, but ricotta is a good idea too.
