Sweet Potato Skillet Hash

I love weeknight meals like this one, that can be whipped up in a single skillet. When you’ve worked a long day and you’re tired and hungry, throw a bunch of veggies in a hot cast iron skillet, stick a fork in it, and call it a night.

Ingredients: (makes 2 servings)

1 cup diced onion

1 small yellow potato, chopped

1 green pepper, chopped (red pepper would work too)

1 sweet potato, peeled and chopped

1 bunch kale, washed and rough chopped

2 fried eggs

1 teaspoon salt

1/2 teaspoon cumin

1/2 teaspoon chili powder

1 Tablespoon olive oil

Directions: Heat olive oil in a skillet on medium high heat. Add the onions, potatoes, sweet potatoes, bell pepper, salt, and spices. Stir together for several minutes until the veggies soften a bit.

Next, work in the kale and cook until it turns bright green and wilts slightly (about a minute).

In a separate skillet, fry two eggs and lay them over top of the skillet hash.

Serve right out of the skillet.

Oooh yum! That looks so tasty! This reminds me of this dish at a diner here in Ann Arbor: Fleetwood’s Diner. They have this thing called the hippie hash which is made like this but it also has tempeh in it! http://www.allmenus.com/mi/ann-arbor/247999-fleetwood-diner/menu/breakfast/
I’ll need to try this though. Sounds filling and delicious!

This looks like so many of my winter dinners – yum! I love the eggs on top. Perfect comfort food plate. :)
