Thai stir fry

Recently, I have been attempting to venture out of my cooking comforts! I love thai food and I find it difficult to replicate that same stir fry taste at home. So, I went to the Yes! organic market and found some supplies to start me on my quest for the perfect stir fry.

First, I picked up some fish sauce. I was originally turned off by this ingredient, but I learned that it is the main ingredient in thai cooking so I decided I had to give it a try. Then I found some roasted chili paste to add to my dish. I cut corners because I wanted to make it quickly and bring it to work the next day. Next time, I will experiment a little bit more!

This was relatively simple for me- just chop up any vegetables that you like. I used scallions, red bell pepper, broccoli, and carrots. I also chopped up some firm tofu and put it over high heat on the stove to saute with about 1 tablespoon of olive oil. I set the tofu aside and then put about 1 teaspoon of ginger, 1 teaspoon garlic power, 1 tablespoon of chili paste, 2 teaspoons of sugar, 2 teaspoons of fish sauce (I was scared to put any more than that) and 1 tablespoon of canola oil. I mixed the spices together for a minute or two over medium heat and then added the veggies to saute! After the vegetables were tender, I just mixed in the tofu and added a few swirls of soy sauce and a touch of sesame oil.

This is a great economical meal because it makes about 2 lunches and it is incredibly healthy with the red bell pepper and broccoli. I’m not providing a specific recipe this time, because I want to continue to experiment. Next time, I think I’m going to figure out the balance between the chili paste, sugar, and fish sauce because I’ve read that it is key to making a great stir fry. So, more to come!

here is the chili paste I used, I will definitely keep using it! it’s super easy and provides a great heat to the dish. I REALLY want to try to green curry paste that Thai Kitchen makes, maybe next time!

P.S.- this curry will leave a little stink for a while, I don’t think my boyfriend was too pleased , but it tasted good!
