Tomato and Cheese Tarts with Basil

This is a very exciting post for me! Kitchen PLAY asked me to participate in its “30 Days of Outdoor Dining” event, sponsored by LAND O’ LAKES Deli Cheese. (See below for more details about the event.) My assignment was to create a fun, summer dish featuring Land O Lakes® 4 Cheese Italian Blend deli cheese.

In order to get an idea for a recipe, I first had to sample the cheese. I’d never tried this cheese and was pleasantly surprised by how rich and creamy it was. The flavors were bold, featuring Asiago, Romano and Parmesan cheeses. Instantly, I thought back to this summer tomato pie recipe and used it as inspiration.

I decided on mini cheese and tomato tarts with bright basil and tangy spring onions. These tarts are ideal for out door dining because they are portable and make perfect individual servings that don’t require utensils. Besides, who doesn’t love tomato pie in summertime?

Ingredients: (makes 8 pies)
3 tomatoes, peeled and diced
2 Tablespoons mayonnaise
6 leaves of fresh basil, chopped
6 green onions, chopped
8 tart shells (about 4 inches in diameter)
8 slices Land O Lakes® 4 Cheese Italian Blend deli cheese
salt and pepper
cherry tomatoes (for garnish)

Directions: Prebake the pie shells at 350 degrees F for 10 to 12 minutes (or follow package instructions). Set aside to cool.

Next, drain any excess water off the tomatoes. Scrape out the seeds and press with a paper towel. Get as much of the water out as you can before adding them to the mayo mix.

In a mixing bowl, combine the mayo, onions, basil, and tomatoes. Add in about a 1/2 teaspoon of salt and pepper as well.

Fill the tart shells with the mayo and tomato mixture.

Top each with a slice of Land O Lakes® 4 Cheese Italian Blend deli cheese.

Place on a baking sheet and add a cherry tomato garnish.

Bake at 350 degrees F for 10 min, until cheese is melted and golden brown on the edges. Remove from oven and allow to cool slightly before serving.

Garnish with more chopped basil and onion.

A perfect 3 bite snack, ideal for a picnic or barbecue.

These look amazing! I’ve never tried or bought the 4 cheese Italian blend, but from what you said it sounds great. I can not wait to try these!
