This weekend, my boyfriend and I hosted a Kentucky Derby party. And what could be better to serve at a party than DIP? We made 2 delicious dips that were simple, fresh, flavorful and healthy! These were not your typical french onion and watery salsa.
The first was a cream cheese and sun dried tomato dip. To make this, all you need is 1 block of cream cheese (you can use light if you would like), 1 small jar of sun dried tomatoes drained, red pepper flakes, oregano (fresh from the garden!). Blend all of these ingredients together with your immersion blender if you have one! You could also use a food processor or even stir by hand if you have strong forearm muscles. This dip is creamy, yet zippy and packed with flavor. It pairs nicely with chips or crackers.
The second dip was a white bean and olive oil dip…such clean flavors! All you need is one can of navy beans drained and rinsed, a drizzle of evoo, salt/pepper, lime juice (or you could use lemon), and add in some fresh cilantro from the garden. This dip is light, yet creamy and citrus-y and pairs will with veggies, crackers or you could even eat it on top of a bed of greens.
