A few nights ago, my boyfriend and I were scrounging for something to eat. We were starving, had no game plan for dinner and had no patience to wait for something to cook. We searched the fridge high and low for something we could eat. We found some whole wheat tortillas, cheese, salsa and avacados and a can of black beans in the cabinet. We decded on cheese quesadillas with the fixins on the side.
I quickly heated the black beans separately on the stove top. Cooking beans this way is easy, efficient and eliminates the hassle of cooking the beans inside of the quesadilla. Make sure to drain canned beans before heating. I added sriracha sauce and soy sauce to the beans for flavor and heat. While the beans were simmering, I toasted the tortillas on each side and melted cheese in between. I used a pizza cutter to slice the quesadillas into triangle wedges and topped them off with salsa and sliced avacado. I serve the beans on the side.
This meal was quick, easy and low budget. After only 15 minutes we were noshing on cheesy, melty quesadillas piled high with beans, avacado and salsa. A perfectly satisfying meal.

I make almost this exact same meal all the time! Whenever I’m out of food (aka produce and fruit), I always still seem to have ww tortillas, cheese, black beans and salsa on hand.
