Happy New Year and a Cherry Dessert Mold

Happy New Year! How did you celebrate? Last night, we rung in the new year with friends at a Mad Men party. Guests were asked to dress in themed attire and bring a retro dish. I signed up for the jello mold.

Gelatin is not vegetarian, so I rooted around Whole Foods for a plant-based version. I found one by Natural Jel Desserts that was cherry flavored and pretty easy to use. It also tasted great.

I wanted a mold that was over the top, crammed with goodies. I used vegan marshmallows, pecans, and all natural maraschino cherries. It turned out perfectly, colorful and sweet.

2 packages Natural Jel Desserts gelatin (or other plant based gelatin)
1.5 cups water
2 cups mini marshmallows (vegan)
1 cup maraschino cherries
1/2 cup chopped pecans
(You will also need a mold)

The plant-based gelatine sets faster than regular gelatin so you have to work quickly. The additional ingredients should be at or close to room temperature.

In a mixing bowl, combine the gelatin and 1/5 cups boiling water. Whisk until the sugar dissolves.

Next, add the marshmallows, cherries and pecans. Stir to combine and pour into your mold.  The gelatin will start to set very fast. Refrigerate for at least 1 hour to be sure it sets completely.

And I just had to include a shot of my husband and me dressed up for the party.
